To my great surprise, it turned out perfectly! I was particularly nervous about the caramel, and even though the method described above worked very well I will get a candy thermometer for the next time. I really appreciated the very detailed description of the whole process.

It just doesn’t get thick enough and then becomes too runny, like I’ve over whisked it. Is there a knack to it?
By the way, the walls tasted delicious.

I agree with above that it needed some plant based milk, when trying to roll it out it was just crumbling and breaking apart so I’ve added some soy milk to help keep it together.

How far in advance can I make this? Would making it the day before and keeping it in the fridge work?

For one, they were very hard and crunchy. Also, they ended out completely hollow. When I break them in half they just crumble into pieces. They are very cute though. I tried several different temperatures and baking times, but they still always ended up hollow and hard. Any ideas on why that might be and what I could try?
Thanks!

These were my first successful macarons. I also want to try to make a chocolate version, but am SO scared to tempt fate. 😂 If you were to add cocoa, would you reduce the other dry ingredients?
